Rotalink sells dual and single channel incremental encoders with 48/24 pulses per revolution, CMOS/TTL output, supply voltage of 3.8 to 30 VDC, and suppy current of <30mA/11mA.

MicroE Systems makes Mercury encoders which feature single or analog output, small sensors, vacuum encoder types, 0.5µm resolution, A-quad-B output with index tape scales, analog sine/cosine output, and more.

LTN makes rotary encoders such as their G1B model with an outer diameter of 130mm and inner hollow shaft of 60mm, 8192 imcrements, and more as well as a resolver to encoder converter.
